Chicken & Apple Sausage Hash

Ingredients
Coconut Oil |
1 tablespoon
Applegate No Sugar Uncured Bacon | 3 strips
Brussel Sprouts | 2 cups
Small Zucchini, sliced | 1
Small Red Pepper, sliced | 1
Small Red Onion, sliced | ½
Thyme Leaves | 1-2 tablespoons
Applegate Chicken & Apple Sausages, sliced | 4
Salt & Pepper | dash

Directions

  1. In a large cast iron skillet or pan, heat ½ tablespoon coconut oil on medium-high heat. Once hot, add brussels sprouts and bacon. Dash with salt and pepper and sauté for about 12 minutes. Stir occasionally.
  2. Next to the pan, add the zucchini, red pepper, onions, sausage and thyme. Sauté for 10-12 minutes or until Brussels sprouts are cooked through.
