Chicken & Apple Sausage Hash

Ingredients
Coconut Oil | 1 tablespoon
Applegate No Sugar Uncured Bacon | 3 strips
Brussel Sprouts | 2 cups
Small Zucchini, sliced | 1
Small Red Pepper, sliced | 1
Small Red Onion, sliced | ½
Thyme Leaves | 1-2 tablespoons
Applegate Chicken & Apple Sausages, sliced | 4
Salt & Pepper | dash
Directions
- In a large cast iron skillet or pan, heat ½ tablespoon coconut oil on medium-high heat. Once hot, add brussels sprouts and bacon. Dash with salt and pepper and sauté for about 12 minutes. Stir occasionally.
- Next to the pan, add the zucchini, red pepper, onions, sausage and thyme. Sauté for 10-12 minutes or until Brussels sprouts are cooked through.
